Easy Delicious Poha Recipe

Ingredients
1 bowl thick poha (flattened rice)
1 medium onion (finely chopped)
1 small potato (peeled & diced)
1 green chili (finely chopped)
½ teaspoon mustard seeds
½ teaspoon turmeric powder
½ teaspoon red chili powder (optional)
1 tablespoon peanuts
8-10 curry leaves
1 teaspoon sugar (optional)
1 tablespoon lemon juice
2 tablespoons oil
Salt to taste
Fresh coriander leaves (for garnish)
Sev (optional, for topping).

Step by Step Process
1. Rinse Poha: Wash the poha under running water for a few seconds, then drain and let it sit for a few minutes to soften.
2. Prepare Tempering: Heat oil in a pan, add mustard seeds, and let them splutter.
3. Add Ingredients: Add peanuts and sauté until golden. Then add chopped onion, green chili, and curry leaves. Cook until onions turn soft.
4. Add Poha: Add turmeric and salt, mix well, then add the softened poha and stir gently.
5. Final Touch: Turn off the heat, add lemon juice, mix well, and garnish with fresh coriander.
6. Serve Hot: Enjoy with tea or as a light breakfast.
